Introduction

This is a little recipe I invented when I didn't have a lot of time and very little in my fridge and it's become one of my favorites! This is a little recipe I invented when I didn't have a lot of time and very little in my fridge and it's become one of my favorites!
Number of Servings: 2

Ingredients

    4 oz dry whole wheat pasta (I use penne equals 1 cup per person)

    1 tbsp extra virgin olive oil

    1 tbsp lemon juice from concentrate

    3 tbsp of light parmesan cheese (Kraft)

    26-30 deveined and shelled shrimp

    basil (2 or 3 shakes)

    cilantro (2 or 3 shakes)

    dill weed (2 or 3 shakes)

    garlic powder (I like mine garlicy so I do about 3 or 4 shakes)

    1/2 - 1 tbsp of margarine

Directions

Cook pasta. Since shrimp doesn't really take that long I usually start cooking it about 1 -2 minutes before pasta is ready and I usually cook it in a little margarine in the microwave for about 2 - 3 minutes (depending on how strong your microwave is). Once pasta is cooked, toss parmesan, olive oil, margarine, lemon juice and spices with pasta in a small dish.

Serve promptly topping pasta with cooked shrimp (approx 13 per person) and a sprinkling of basil.
Your favorite veggies will compliment this meal well (especially asparagus, yum!)
