Ingredients

    12 serving Smithfield All Natural Bacon
    3 serving Vidalia onion, raw 1 medium onion (by BEACHSANDPIPER)
    10 cup Sliced White Potatoes in Can
    0.25 cup Flour - Gold medal all purpose flour
    1 cup Cider Vinegar
    1 cup Granulated Sugar
    2 tsp Salt
    0.5 tsp Pepper, black

Directions

cut 1/2 to 3/4 lb of bacon into pieces, saute in skillet till crispy then remove to a plate, add the chopped onions to the grease in pan and saute till light brown, add the vinegar, sugar, salt and pepper and flour to the onions in the pan and stir, this will thicken like a gravy. add the DRAINED CANNED potato slices to the pan, add the bacon back into the mix, stir to mix. i find it best to bake it in a casserole pan or in the pan you used if its oven proof with a lid for one hour at 350. my sister makes her german potato salad in her electric skillet, either way works fine. do the math you need 5 lbs of potatoes for this recipe, most cans are about 15 oz with the liquid. i bought 10 cans and it worked out well for this group, reduce the recipe in half if you want it for dinner and some left overs.
