Introduction

Ingredients

    10 ounces cooked, diced chicken breast
    1 cup Cream of chicken soup (Campbells Healthy Request), unprepared
    1 cup light sour cream
    1/4 cup salsa
    1 can diced green chiles
    4 tbsp chopped cilantro
    4 tbsp chopped scallions
    1 cup reduced fat cheddar
    12 corn tortillas
    1 28oz can green enchillada sauce

Directions

Preheat oven to 375. Combine the first 8 ingredients along with 1/2 cup of the cheese. Coat a 13 x 9 baking dish with cooking spray. Add 1/2 cup of the sauce to the dish to lightly coat the bottom. Warm tortillas 30 seconds in the microvave. Divide the filling between them and roll up, placing seam side down in the pan. Cover with remaining sauce and cheese. Bake 25-35 min until bubbly and cheese is melted.
