Ingredients

1/2 tbsp olive oil
12 oz boneless, skinless chicken breast
5 tsp balsamic vinegar
2 tbsp cherry jam, or any flavor of jam or preserves
1/2 tsp serving chicken bouillon powder
1/2 tsp sugar
1 tbsp spreadable light butter
2 servings Bob Evans mashed potatoes
Directions
Adjust oven rack to top position and preheat oven to 450 degrees.
Pat chicken dry with paper towels; season all over with salt and pepper. Heat oil in large skillet over medium high heat. Add chicken and sear until browned, 2 to 3 minutes per side. Turn off heat. Place chicken on baking sheet and roast until cooked through, about 7 minutes.
Add vinegar to same skillet and simmer over medium heat, scraping up any browned bits from bottom of pan, until slightly reduced, about 30 seconds to 1 minute. Dissolve bouillon powder in 1/3 cup warm water. Stir in jam and add mixture to the skillet. Cook until thickened, 3 to 5 minutes. Season with salt and pepper and 1/2 tsp sugar. Turn off heat. Stir in 1 tbsp butter until melted. Return chicken to skillet, turn to coat in sauce.
