Ingredients

    600 grams chicken mini fillets
    200 grams Shallots, peeled and halved lengthways
    400 grams Carrots, chopped very small brunoise
    250 grams Mushrooms, brunoise
    400 grams Canned Tomatoes
    1 serving Knorr Chicken stock in cup of boiling water
    2 tbsp Rapeseed Oil
    3 tsp Coriander, ground
    4 tsp Cumin, ground
    3 tsp Chilli Powder
    1 tsp Salt
    2 tsp Granulated Sugar
    .5 tbsp Lemon juice
    1 Bay Leaf
    4 tsp Garam Masala
    1 tbsp tomato puree
    100 grams Greek fat free yogurt
    Half a pint boiling water

Directions

Heat oil, add all spices except garam masala. Fry chicken, turning frequently, for a couple of minutes. Add carrots, shallots, mushrooms and tomato purée; on a high heat, fry off well.
Add tomatoes, yogurt, stock, garlic, ginger, garam masala, lemonjuice, sugar, boiling water and bay leaf. Bring to the boil and lower to a simmer for an hour and a half.
