Ingredients

    18 spear asparagus, chopped
    2 cup broccoli, chopped
    2 cup carrots, chopped
    2 cup celery, chopped
    2 cup fresh mushrooms, chopped
    1 bell pepper, diced
    4 Aidells Chicken Sausage - Roasted Garlic & Gruyere Cheese links
    2 sweet potato, chopped
    1 cup dry quinoa
    Water

Tips

I season with Italian seasonings but it is equally delicious with Mexican spices.


Directions

Prepare sausage to package directions in separate pan. Dice all veggies. Roast sweet potato, asparagus and carrot in oven at 350 - 375. Sauté pepper and mushroom in Dutch oven in cooking spray on stove top. Stir in broccoli. Add quinoa and water to Dutch oven and cook 15 minutes. Chop sausage into pieces and add to quinoa mixture. Stir in roasted veggies and serve.

Serving Size: 1 cup
