Ingredients

1 Boneless Skinless Chicken Breast
2 TBS Lemon Juice
2 TBS Lemon Grass (fresh or paste)
2 TBS Sweet Chili Sauce
Fresh Cilantro, chopped
2 Whole Cucumbers
Directions
1. Cook chicken seperately w/ spices of choice (I like cajun for a little heat). Allow to cool thoroughly.
2. Once chicken is cool, finely chop entire breast. Add lemon juice, lemon grass and sweet chili sauce, and cilantro (to taste). Stir all ingredients until combined and refrigerate until step 4.
3. Thoroughly wash cucumbers. Leaving skin on, slice cucumbers into coints about 1/4 inch thick.
4. Scoop about 1 TBS chicken mixture onto each cucumber coin. Chill, if desired, and serve!
Makes approx. 60 pieces.

*Note: This can be stored in refrigerator several days.
