Ingredients

    2.0 cup Ugwu (Nigerian Pumpkin Leaf)
    1.0 cup Amaranth Greens
    0.75 cup, chopped Onions, raw
    5.0 pepper Hot Chili Peppers
    1.0 fillet Mackerel (fish)
    5.0 1tsp Palm Oil
    100.0 gram Cow skin (pomo, kponmo)

Directions

Boil and debone fish. Break into small chunks. Keep the water. In a separate pan, sautee onion and pepper in oil. Add fish and veggies and a few tablespoons of the water from boiling the fish. Cover and simmer until dry. Season to taste.
