Ingredients

1 pkg veggie ground round asian flavour
1/2 onion, sliced
2 1/2 carrots, peeled and julienned
2 celery stalks, julienned
1/2 red pepper, sliced
1/2 orange pepper, sliced
1/2 yellow pepper, sliced
8 lettuce leaves (red, green or romaine)
Sauce:
1/3 cup lime juice
1 1/2 tbsp ginger root, peeled and grated
3 tbsp water
3 tbsp reduced-sodium soy sauce
3 tbsp peanut butter, light
1 1/2 tbsp honey
2 tbsp chili powder
3 cloves garlice, minced
Directions
Sauce: Whisk all ingredients in a saucepan on low heat until combined. Keep on low heat, occasionally stirring until ready to mix into veggie mixture.
Heat a non-stick skillet over medium high heat and spray with non-stick spray. Sautee veggies for 5 minutes. Add in the veggie ground round and mix til evenly mixed. Cover and cook 10 minutes. Remove lid and add the sauce. Stir. Place the lid back on and cook for 5 minutes. Remove lid and stir. Raise the temperature slightly to reduce the sauce and cook, stirring frequently, until desired consistency.
When ready to serve, place about 2 tbsp of mixture into the lettuce leaf and wrap, burrito style.
Serving= 2 wraps. Makes 4 servings.
