Ingredients

    1 cup cooked sweet potato
    1/2 cup butter, softened
    3/4 cup maple syrup
    1 egg
    1/2 teaspoon sea salt
    1/2 teaspoon ground cloves
    1/2 teaspoon ground nutmeg
    1 teaspoon cinnamon
    1 teaspoon baking soda
    2 cups bulgar (or amaranth) flour
    1/2 cup raisins

Directions

Makes around 18 medium-sized cookies

Place all ingredients except the raisins into a food processor and process until well blended. Transfer to a bowl and fold in raisins. Form into walnut-sized balls and place on buttered cookie sheets. Bake at 325 degrees for about 20 minutes. After 5 minutes in the oven, press cookies down lightly with a fork. Let cool completely before removing to an airtight container for storage. Store in refrigerator.
