"chicken" salad made with chickpeas! "chicken" salad made with chickpeas!
Number of Servings: 6

Ingredients

    1 15 oz can of garbanzo beans, rinsed

    3 green onions, chopped, leafy bits and bulbs tossed

    1 tsp curry powder

    1/8 tsp ginger powder

    1/8 tsp celery salt

    pepper to taste

    3 tbsp veganaise

    1.5 tsp mustard

Directions

blend all ingredients, except onions, in a blender or food processor until you reach desired consistency. stir in green onions after.

you could also add golden raisins and cashews for more flavor, remember to count the additions! enjoy!

    Incredible!
    This recipe was GREAT!!! Even making it from memory & thus forgetting some ingredients (no spices or onion, but used Annies Organic Dijon for a little kick), it still ruled! Also, b/c I'm not vegan, Hellman's canola mayo cut out even more fat/calories. Will def make again w/ all the spices! YUM! - 12/31/08

    This was awesome! I left out the onions, but it was so freakin' good! I can't say it really tastes like chicken, but it has the same texture as a chicken salad. Love it! - 10/29/08

    I had my doubts about this recipe, but it was cheap (I had everything on hand) and I'm always up for something new. I did leave out the onions and the mustard due to personal preferance and added a little more veganise. I think it only makes 2 servings though. = ) - 8/18/08
