Introduction

Ingredients

    1 pound cod fillets (cut into 3 equal pieces)
    1/4 cup all purpose flour
    1/4 teaspoon salt
    1/8 teaspoon black pepper
    1/8 teaspoon paprika
    1 large egg, mixed with fork
    1/2 tablespoon unsalted butter
    1 tablespoon extra virgin olive oil

Tips

I find that dredging in flour first and then dipping in the beaten egg provides a nice color and crust and prevents excess fats from being absorbed into the flour as there is always a good amount of fat left in the pan.


Directions

Dry fish fillets with paper towels and set aside.

Heat butter and olive oil over medium to medium low heat in a nonstick pan.

Mix together flour, salt, pepper, and paprika.

Dredge the fish in the flour first then dip into the egg, covering both sides. Add to pan and cook 3 to 4 minutes on the first side and 2 to 3 minutes on the second side, depending on thickness of fish.

Pat excess fat off fish after cooking if desired.
