Introduction
A mexican twist on lasagne, layered tortillas, beans, and meat with cheese and sauce. Not very low on calories or sodium (let me know if the sodium is a mistake, seems kind of high?) but a very yummy treat once in awhile! Ingredients

2 lbs lean ground beef
8 mission 8" low carb tortillas
1 can fat free refried beans
half small yellow onion
2 tbsp chili powder
1 tbsp cumin powder
1 tbsp onion powder
1 tbsp garlic powder
1 cup salsa
2 cups shredded mexican blend cheese
1 can red enchilada sauce
.5 cup green onion slices
Directions
Brown meat and onions, drain grease. Add seasonings to meat. Layer two tortillas in the bottom of a baking dish, covered with a thin layer of beans. sprinkle a third of the meat on top, then drizzle some of the enchilada sauce and sprinkle some cheese. Repeat this 2 more times (3 layers). Put two more tortillas on top, cover with salsa and another layer of cheese. Garnish with green onion slices on top.
Place in oven at 400 degrees farenheit for 20 minutes or until warm through. Serve with lettuce and fat free sour cream if desired.
