Introduction

A variation of Tom's Shrimp Southern Country Style A variation of Tom's Shrimp Southern Country Style
Number of Servings: 4

Ingredients

    Scallops, raw, 12 oz
    Garlic, 1 cloves
    Coconut Oil, 1 tbsp
    Turnip Greens, 4 cups, chopped
    Bacon(raw), 2 medium slices(cut in to 1/4ths)
    Nutmeg, ground, 1 tsp
    Lemon, 1/4 without seeds
    Lime, 1/4
    Wild Rice, 2 cups


Directions

This is variationn of my shrimp dish wi th scallops as a substitute. It is a delight for the palate. You may serve ANYTIME. It can be served informal or even formal.

First, you need to prep your Scallops, prep your turnip greens by thoroughly washing them if fresh, or thaw them out if frozen. You can prep these while you are boiling your wild rice.

Get your frying pan hot throw in your two pieces of bacon cut into fourths. Let that cook up to season the pan. When bacon is done, throw in your turnip greens on top, stir & stir & cook. Grate 1 teaspoonn of nutmeg and sprinkle on turnip greens in pan. Stir & Stir. Cook until done.

Next, in another frying pan, get 1/4 cup of water to a simmer. Now put 1 tablespoon of coconut oil in the pan and stir. Peel and smash your garlic clove and throw it in the pan. Stir. After 30 seconds, either take out the garlic buttons or leave in as you choose. Add your scallops and stir. Cook until done. Squeeze a little fresh lemon and/or Lime juice onto the scallops.

Make a bed of the greens on your plate, throw a few of the scallops on top, and spoon up some wild rice to the side. Have fun and Good Eating!
