Introduction

Ingredients

    mascarpone cheese, 4 oz (remove)
    *Grey Poupon Dijon Mustard, 2 tsp (remove)
    Chicken Breast, no skin, 6 breast, bone and skin removed (remove)
    Onions, raw, 1 small (remove)
    Garlic, 5 tsp (remove)
    Butter, salted, 1 stick (remove)
    Portabella Mushrooms, 400 grams (remove)
    Rose Wine, 16 fl oz (remove)

Directions

Sear salt and peppered whole chicken breasts in two pats of butter. 1 minute per side - remove from pan. Chop onion, saute/sweat in one pat of butter on low-medium heat. Add garlic -sweat some more, then scrape bottom of pan, add mushrooms and two more pats of butter and let cook until mushrooms are reduced. Add 1 cup of Marsala Wine - turn up heat to medium high and let reduce. Takes 10 mins max. Then add dijon mustard and mascarpone cheese - stir in. While it cooks together, slice chicken - it will NOT be fully cooked, and will be added in 10 minutes or so. After adding, pepper to taste and then finish cooking until sauce is reduced and chicken is no longer pink. Toss in chopped flat leaf parsley and stir in. Turn off heat and let sit for 10-15 minutes - sauce will thicken.

Serve over garlic mashed taters!!
