Ingredients

    1 cup brown rice
    2 cups chicken broth (can sub sodium free or just plain water to lower calories)
    1 apple diced
    1/2 onion diced
    1 tbsp butter
    1 bay leaf (whole do not crumble!)
    1.5 tbsp curry powder (or to taste)

Directions

cook onions in the 1 tbsp of butter in a sauce pan. When wilted pour in the chicken broth (or water) and bring to a boil. Add rice, curry, apple, and bay leaf Cover and reduce heat. Fork the mixture every so often to prevent burning and remove the bayleaf before serving.

    Very Good
    This made a great base for a dinner! I added 1 pork chop and some red peppers and and served it on top of broccoli. It made a complete meal. I think next time I will try it topped with some tilapia. - 2/6/10
