Ingredients

    3 bone less,skin less chicken thighs diced(pork is better but can also substitute w/ beef)
    1-2 cups of cilantro (2 cups=96 tbsp) roughly chopped
    1 can of black beans
    5 thinly sliced ginger root
    1 medium onion sliced
    soy sauce and ground black pepper to taste

Directions

heat pan and add oil. when hot, add onions and fry til transparent. add meat and cook until browned. add rest of ingredients. when cilantro has wilted, add soy sauce and pepper to taste.
