Ingredients

    1 large red onion sliced thinly
    1 green pepper sliced thinly
    1 red pepper slice thinly
    2 cups whole button mushrooms
    1 bulb of garlic seperated and de papered
    1 can drained chickpeas or 1 and 1/2 cups of dried chickpeas tht have been prepared
    1 tbsp olive oil
    1/2 tsp ground cumin
    1/2 tsp kosher or sea salt
    1 tsp ground black pepper
    1 tbsp chili powder (I like new mexico chili powder found in bags in the hispanic food isle)
    1/4 tp cayenne pepper or more if you like it spicey



Directions

Pre Heat oven to 450
Slice peppers and onions very thin. I used a mandolin/v-slicer. In a big bowel place veggies, garlic and chickpeas. Drizzle with olive oil and then add spices. Mix with hands or cover and shake until veggies and spices are well mixed.

Spread veggies on a large greased pan. Bake for 25-45 minutes (depending on your oven) until veggies begin to brown or blacken to your liking. My oven takes forever and i like my veggies to be crispy!

    My 2 little ones didn't like this, but hubby and I were THRILLED! He said they were a home run! I used sweet onion instead of red, added yellow pepper and zucchini, added dried oregano & left out cayenne. Roasted 25 minutes, and SHEER PERFECTION! Excellent side, but could stand on own as a meal! - 5/11/10

    I REALLY LOVED THIS RECIPE. I AM SURE I WILL MAKE IT AGAIN AND AGAIN. I ESPECIALLY LOVED THE WAY THE THIN SLICED ONIONS CRIPED UP ALMOST LIKE ONION RINGS. VERY ENJOYABLE!!!! - 5/8/08

    I absolutely love chick peas! I was especially pleased that the recipe called for kosher salt, since it is nutritious like sea salt. Yum!

    This is very tasty and quite unusual. I think you could substitute any vegetables and have it work out great (I had mushrooms, zucchinis and carrots). It only seemed to need 20/25 minutes in my oven. - 5/4/08
