This recipe makes a full meal in a bowl. Recipe is for one person. Enjoy for Lunch, Dinner, or in a smaller portion for a satisfying Snack. Ingredients

Mayonnaise, regular (mayo),- 1 Tbl
Chicken Breast -( no skin), (OR chicken tenders ) 2 ounces
Apples(fresh) - 1 medium apple
Raisins- about 15
Celery, raw- 1/2 stalk
Directions
1. Assemble ingredients.
2. Wash and then dice apples and celery to personally desired cube sizes (we like about 1/2 to 3/4 inch cubes).
3. Cut chicken tenders (or breast with skin removed) into 3/4 -1 inch cubes.
4. Spray canola oil in frying pan.
5. Heat frying pan on a medium heat until drop of water sizzles (be careful not to burn oil)
6. Put chicken into pan and stir fry until the surface is light golden brown.
7. Let chicken cool.
8. Thoroughly mix apples, celery and raisins with mayonaise OR mayo substitute
9. Place cooked cooled chicken on top of mixed ingredients or stir in as desired.
10. Serve in bowl
