    4 c. Patty Pan Squash, Shredded
    1 Onion, Small, Shredded
    1 cup Bread Crumbs
    1 cup Parmesan Cheese, grated
    2 egg whites, lightly beaten
    1/2 tsp Salt
    1/2 tsp Pepper

    1 cup of prepared tomato sauce for dipping, if desired


Pre-heat oven to 350 degrees.

Using a grater or a food processer, shred squash and onion.

Put into colander, using a paper, press excess water from veggies.

Put shredded veggies into a bowl with bread crumbs, parm, egg, salt, and pepper. Mix together.

Grease baking sheet with olive oil spray. Shape vegg mixture into patties and place on baking sheet. Bake for 20 minutes or until golden brown on outside. Let sit for a couple minutes before serving.

Serve with favorite tomato sauce on top or as a dip.

  • This is very good. I did make it a bit different. I added a few banana peppers in it. I also make my own bread crumbs so I can control the content more. I will be making this again. Thank you for sharing. - 7/14/13
