Ingredients

3 Tbsp. Olive Oil
4 thick-cut boneless pork chops
2 Tbsp. brown sugar, packed
1/2 tsp. black pepper
1/2 tsp. yellow mustard
1 Tbsp. lemon juice
1 (8-ounce) can tomato sauce
1/4 cup water
Directions
1. Preheat oven to 350 degrees F (175 C).
2. Heat olive oil in medium skillet over medium heat. Place pork chops in the skillet, and brown about five minutes on each side. Remove from heat.
3. In a small bowl, mix brown sugar and pepper. In another small bowl, mix tomato sauce and mustard.
4. Arrange pork chops in a medium baking dish (I use a 7X11-inch dish). Sprinkle with lemon juice, season with brown sugar mixture, and cover with tomato sauce mixture. Pour water into the baking dish.
5. Cover, and bake one hour in preheated oven to an internal temperature of 160 degrees F (70 degrees C).
Sauce can be used as a dip for French bread.
Serves 4.
