Introduction

Ingredients

    3 Tbsp. Olive Oil
    4 thick-cut boneless pork chops
    2 Tbsp. brown sugar, packed
    1/2 tsp. black pepper
    1/2 tsp. yellow mustard
    1 Tbsp. lemon juice
    1 (8-ounce) can tomato sauce
    1/4 cup water

Directions

1. Preheat oven to 350 degrees F (175 C).
2. Heat olive oil in medium skillet over medium heat. Place pork chops in the skillet, and brown about five minutes on each side. Remove from heat.
3. In a small bowl, mix brown sugar and pepper. In another small bowl, mix tomato sauce and mustard.
4. Arrange pork chops in a medium baking dish (I use a 7X11-inch dish). Sprinkle with lemon juice, season with brown sugar mixture, and cover with tomato sauce mixture. Pour water into the baking dish.
5. Cover, and bake one hour in preheated oven to an internal temperature of 160 degrees F (70 degrees C).
Sauce can be used as a dip for French bread.

    I did not have the tomato sauce so I used a 1/2 jar of pizza sauce that was left over. Put the sauce over 1/2 cup pasta. It was really good and will make again with tomato sauce for sure! - 10/27/11

    This recipe is simple. The 1 1/2" chops were very moist even though I cut off all the visible fat before cooking. Using a baking dish just large enough to hold the browned chops kept the sauce from spreading too thin. Brown Sugar Twin cut some calories. Will definately make again. - 1/11/10

    I changed the olive oil to pam to save calories but this was great my 2.5 year old ate a whole one. He never eats pork chops. - 2/15/09
