Ingredients

    20 oz pkg extra lean ground turkey
    1 large onion, chopped
    1 Carton (4C) O Organics Chicken Broth
    4 stalks celery, chopped (4 oz)
    1/2 oz garlic, minced
    1 large red bell bepper, chopped (8 oz)
    3 medium zucchini
    1 large jalapeno pepper, diced
    1 anaheim pepper, diced
    7 scallions (green onions)
    4 oz TJs Frozen tri-color peppers
    3 tomatoes, pureed
    2 cans diced tomatoes w/ green chilies (one pureed with fresh tomatoes)
    3 T brown sugar
    1 can tomato paste
    1 can pinto beans
    1 can dark red kidney beans
    1 cup frozen southwest veggie blend (corn, black beans, broccoli, peppers)
    juice of 1/2 lime
    Frank's Red Hot
    chili powder
    fresh ground black pepper
    oregano
    crushed red pepper
    Adobo
    Nature's Seasoning
    garlic powder

Directions

Satuee onions and celery in EVOO/some of the chicken broth in skillet

Dice 2 of the zucchini. Shred/grate the other one.
Chop green onions. Put whites in with sautee. Save green tops for later.

In large pot, heat chicken broth and add diced zucchini and peppers.

Add onions/celery to peppers/zucchini.

Add rest of broth (if any).

Brown turkey with garlic & some of the spices. Add to mix.

Puree fresh tomatoes with one can diced tomatoes. Add to mix.

Add other can (as is) of diced tomatoes.
Add tomato paste.

Add beans.

Add frozen stuff.

Add shredded zucchini.

Squeeze in lime juice.

Add brown sugar & spices & Frank's.

Heat to boil and simmer for a few hours.
Add greens from scallions & serve. Top with reduced fat 4-cheese Mexican cheese if desired (nutritional info not included in recipe).
