Introduction

Ingredients

    1 1/4 lb. skinned chicken thighs, (I use boneless)
    1 cup tomato sauce
    1/2 cup diced carrots
    1/2 cup diced onion
    1/2 cup diced green pepper
    1 Tablespoon white vinegar
    1/2 teaspoon salt
    1/2 clove garlic, minced
    1/4 teaspoon basi
    1/8 teaspoon oregano
    Dash black pepper
    1/2 teaspoon sugar
    1/2 cup canned mushroom pieces
    Snipped parsley

Directions

In medium non-stick skillet, cook chicken thighs until browned on both sides.

In large bowl, combine remaining ingredients, except mushrooms, add tomato sauce to vegetable mixture., mix well.

Pour mixture into chicken, cover and simmer 30 minutes.

Add mushrooms and cook uncovered for 10 more minutes or until chicken is tender.

Makes 2 servings

    This is very good but I found that one cup of tomato sauce is not enough. I added a can of stewed tomatoes and it was enough to put on my rice. - 11/19/08

    This is something I have been looking for. My husband loves Cacciatore. I'm gonna make it tomorrow. I may have to use chicken breast because that's what is on hand. Hope it is still good.
