Introduction
A delicious breakfast that can be made in advance and wrapped in saran wrap or eaten hot right away with your fingers. Great when you are running for the bus! Yummy cold too. Ingredients

1 Tbsp. finely chopped onion
1 Tbsp. finely chopped green pepper
1 egg
1 Tbsp. water
Salt and pepper to taste
1 Tbsp. grated cheddar cheese
1 six inch whole wheat tortilla
Directions
Makes a single serving.
Spray a small fry pan with Pam (low cal oil spray)
Saute onion and green pepper while beating egg and water.
When onion turns translucent pour egg mixture over top.
Sprinkle with cheese and top with tortilla.
Let cook for one minute (medium heat).. Don't overcook! Just until egg is set.
Gently flip onto a plate and roll up.
