Introduction

I was craving chocolate and these were super fast to make and tasted delicious. I used 2/3 c sugar when I made these and it wasn't quite sweet enough. If you want to cut down on sugar, I recommend no more than 1/4 c. I also recommend using pure vanilla extract as opposed to imitation. The nutritional info doesn't include the nuts. Please note that size of brownies is approximate. The pan I used wasn't quite 8-inches, but the nutritional info is calculated for 9 brownies. Ingredients

    2 large eggs, or 4 egg whites
    1/2 tsp salt
    1 cup granulated sugar
    1 tsp pure vanilla extract
    1/2 cup unsweetened applesauce
    1/2 cup cocoa powder
    3/4 cup all-purpose flour
    1 cup nuts (optional)

Directions

1. Combine eggs, salt, sugar, and vanilla in a bowl.
2. Add applesauce, cocoa powder and flour.
3. Fold in nuts (optional).
4. Spray an 8-inch microwave safe pan with cooking spray. Lightly dust with flour (or using a cooking spray made for baking).
5. Bake on High power for 6-7 minutes. If you do not have a rotating dish, make sure to rotate every 1 1/2 minutes.

Makes 9 2-inch brownies.
