Introduction

Veggies, apples, beans and curry. Veggies, apples, beans and curry.

Ingredients

    Olive oil, 1 tbsp
    Onions, raw, 1 small chopped
    Garlic, 3 cloves
    Carrots, raw, 1 medium peeled and diced
    Celery, raw, 2 strip (4" long) Sliced
    Beans, white, 2 cup
    Curry powder, 1 tbsp
    Apples, 2 fresh peeled diced
    Veggie Broth, 1 cup

Directions

Prep all the veggies first. Fry the vegies in the Olive oil. Add the beans , veggie broth and curry powder. Cook it a bit more.

    unusual, quirky, surprisingly tasty delight! never would've thought of the apples, but it takes the harsh off the curry ~ much as Indian mumsie's use a dash of molasses. The apples make a fiberific alternative to the molasses although different flavor from the molasses entirely... - 12/3/08

    Very Good
    This was great:) I used only 1 clove of garlic and 1/2 cup of canned white beans, I omitted the curry (none on hand) dashed chili powder nutmeg and cinnamon. Really made it delicious - 10/9/08

    Great variation. This variation of yours is very close to my chili. I'll bet it was good!
