Introduction

Quick and easy recipe from Southern Living - I like to use tilapia, but I imagine any kind of fish fillet would work well in this recipe. Quick and easy recipe from Southern Living - I like to use tilapia, but I imagine any kind of fish fillet would work well in this recipe.

Ingredients

    1/4 cup, white cornmeal
1/4 cup fine, dry bread crumbs
    1/2 teaspoon salt
    1/2 teaspoon paprika
1 1/2 teaspoons chopped fresh dill or 1/2 teaspoon dried dill weed
    1/8 teaspoon pepper, black
1 pound fresh or frozen fish fillets, thawed
    1/3 cup milk

Directions

Combine first 6 ingredients in a shallow dish. Dip fish fillets in milk, and dredge in cornmeal mixture. Place coated fish in a lightly greased 13x9 inch pan (I like to cover my pan in aluminum foil and just spray it with cooking spray - makes for easy clean up).

Bake at 450 for 10 minutes or until fish flakes easily when tested with a fork.
