Introduction

Ingredients

    1 medium sized onion, chopped
    1 green pepper, chopped
    2 Tbl Olive Oil
    1 Pre-roasted Rotisserie Chicken from local market
    1 10oz pkg of Vigo's yellow rice
    1/2 cup chicken broth or bullion
    seasoned salt and pepper to taste

Directions

Preheat oven to 350. Saute chopped onion and green pepper in Olive Oil til tender. Debone chicken and tear apart into bite sized pieces. I pull skin off as well. Cook rice according to package instructions. In a 2 quart casserole combine sauted vegetables, chicken, and rice. Add seasoned salt and pepper to taste. Pour the chicken broth over all and bake for 15 minutes to heat through.
