Ingredients

7 Chicken Thighs, boneless and skinless
2 large Potatoes, peeled and cubed
6 Tbsp Curry Powder
3 Tbsp Extra Virgin Olive Oil
Marinade:
1 raw white onion, chopped
3 cloves of raw garlic, chopped
Dried Cilantro to taste
Cumin Powder to taste
Salt to taste
Black Pepper to taste
2 lemons
1 lime
Saucepan or Dutch Oven
2 Large Bowls
Directions
Wash the raw chicken in the juice of one and one half lemons.
In a large bowl, add the chicken with the marinading ingredients: chopped onion, chopped garlic, dried cilantro, cumin powder, salt, black pepper, juice of half a lime and half a lemon.
Let sit in fridge overnight.
In a bowl, mix curry powder with water to semi thick consistancy.
In a saucepan or dutch oven, add olive oil and curry mixture on top.
Turn heat on to medium. After mixture begins to boil, add chicken to pot and remaining lime juice. Cover and let simmer.
When chicken is halfway cooked, add potatoes and simmer until tender.
Enjoy!
