Ingredients

    1 cup Medium Pearl Barley

    1 (1 oz.) Envelope Onion Soup Mix

    2 cups Water

    1 Tbsp. Butter

    1/2 lb. Assorted Fresh Mushrooms, Sliced

Directions

1. Preheat the oven to 350 degrees. In a 3-quart casserole dish, combine the barley, onion soup mix, and water.

2. In a small nonstick skillet, melt the butter over medium heat and saute the mushrooms 3 to 5 minutes or until tender. Add to the barley mixture. Cover the dish tightly with a lid or foil. Bake for 60 to 85 minutes or until the barley is tender and the liquid is absorbed.

This recipe makes 8 servings.

    I added a can of 98% fat free cream of mushroom soup. It was pretty good....DH like it. - 10/6/08
