Ingredients

4 oz Grilled Chicken Breast tenderloins, about 4
1/2 Red onion, sliced
1/2 Green Pepper, sliced lengthwise
1/2 Yellow Pepper, sliced lengthwise
1 Jalapeno Pepper, sliced around, no seeds
3 cloves garlic
1 tsp cumin seed or powder
1/2 paprika seasoning
Salad Dressing: 3 Tbsp low fat sour cream and 3 Tbsp your favorite salsa,
Directions
Grill chicken - I use the George Foreman grill - set aside to cool and slice.
Prepare peppers, onions, garlic and stir fry in pan sprayed with cooking spray.
Add Cumin seed - about 3 or 4 good pinches and Paprika seasoning.
Mix together sour cream and salsa and set aside to mix.
When veggies are cooked but still crisp add chicken to pan to heat through and toss.
Top your favorite salad greens with the grilled mixture - add dressing.
This makes 2 servings. 2 cups of salad and half the cooked mixture makes a hearty salad meal.
Optional: You could add grated or shredded cheese of your choice, not in calorie calculations.
