Introduction

Ingredients

1 Lb hamburger meat
2 small potatoes chopped into small cubes
1 14 oz can stewed tomatoes, Mexican style
1/4 cup finely chopped yellow onion
1/2 tbs. virgin olive oil
1 small garlic clove minced
1/4 tsp. salt
1/4 tsp. cumin
1/4 tsp. chili powder
1/4 cup water
1 cup frozen green chili *optional
Corn tortillas or taco shells
Directions
Cook hamburger meat until done drain and rinse with boiling water, or until browned if using lean meat. Heat diced potatoes in microwave for 3 minutes. Cook onion and garlic in non stick pan on medium in olive oil until soft. Add potatoes and cook for 5 more minutes.
Squish stewed tomatoes with hands until large pieces are broken up. Add all ingredients in crock pot and cook on high for 4 hours or on low for 8 hours (Can be added together in pan for shorter cooking for about 10 more minutes *if cooking this way then drain stewed tomatoes before adding and do not add 1/4 cup water).
If using corn tortillas heat in microwave covered for 2 minutes or until warm. Serve with choice of toppings. I like salsa, tomatoes, lettuce, jalapenos, cheese, and onions. This also tastes really good in burritos.
One serving is a corn tortilla plus 1/4 cup of meat mixture. I usually eat 2 or 3 myself.
