Introduction

You can add whatever veg you have to the sauce. My favourite is broccoli but peas or mushrooms work well too. You can add whatever veg you have to the sauce. My favourite is broccoli but peas or mushrooms work well too.

Ingredients

90 grams wholewheat spaghetti (approx 200 grams cooked weight)
    1 clove garlic
    1 red chili
    3 anchovy fillets
    100g broccoli
    1/2 tablespoon olive oil
    juice of half a lemon
extra olive oil for drizzling (optional)

Directions

Cook spaghetti according to packet instructions. Meanwhile finely chop the chili, anchovy fillets, garlic and brocolli. Heat the oil in a wok or large pan and add the chopped ingredients, stir-frying until the broccoli is cooked but still has some bite. When the spaghetti is cooked, drain and add to the wok, combining all ingredients. Remove from heat and add lemon juice plus extra oil for drizzling if required (nutritional values for extra oil are not calculated in this recipie). Finish with plenty of freshly ground black pepper and serve immediately.
