Introduction

I actually don't like squash, but this one is totally different.. Served up like spaghetti, it is delicious.. and almost calorie free! I actually don't like squash, but this one is totally different.. Served up like spaghetti, it is delicious.. and almost calorie free!
Number of Servings: 2

Ingredients

    1 large spaghetti squash, halved.
    1 cup of canned spaghetti sauce
    1 cup of canned mushrooms (drained)
    8 oz of frozen cooked shrimp, thawed
    4 TBSP grated parmeson cheese.
    Chopped fresh chives, or green onion

Directions

Cut squash in half. Clean out seeds. Place halves face down on plate and microwave for 10 minutes. (Squash will be stringy when flicked with a fork)..
Scrape out the squash from each half onto two separate plates.
Top each with 1/2 cup of spaghetti sauce, and 1/2 cup canned mushrooms.
Add the shrimp.. 4 oz each plate.
Sprinkle 2 tbsp of parmeson cheese on top of each serving. Microwave to heat the whole thing for about 1 minute. Toss the chopped green onion over all.
Yummy...

    First time ever cooking a spaghetti squash. My husband and I both liked this. Very quick meal, although I did cook the squash in the oven. I will make this again. - 1/22/17
