Ingredients
-
9" ready-to-bake pie crust
1 small Shallot
1/2 tsp freeze dried chives
2 whole eggs
2 egg whites
1/2 cup reduced fat cheddar cheese
1 cup Italian blend cheese (or Mozzarella)
1 1/4 c low-fat milk
1/4 tsp Salt and Pepper
1 dash of Tabasco
3 tbs green bell pepper, chopped
Directions
-Pre-heat oven to 350
-Spray pie glass with non-stick cooking spray and set aside.
-In a blender, add shallot and chives, and mix on the "chop"setting.
-Add remainder of ingrediants EXCEPT the green bell peppers.
-Blend for 10 seconds
-Add chopped green peppers to the bottom of the pie dish (and any other veggies you may use).
-Slowly pour mixture from the blender into the pie crust in a circular motion to evenly distribute the cheeses.
-Bake in the oven for 45 minutes or until an entered toothpick comes out clean.
*Makes 8, 1 slice servings
**Add any veggies you may like to the pie dish (zuchinni, onions, mushrooms, etc.) before pouring in mixture
***Can be made crustless for less calories!
