Ingredients

3 Cups Spelt flour, sifted
1 1/4 cup warm water
1/2 cup olive oil
2T fresh herbs (oregano, rosemary, basil, parsley, etc)
1/4 c cornmeal
1T active dry yeast
1T minced garlic
1t sea salt
1t raw sugar
1/4t freshly ground pepper
pinch red pepper flakes
Directions
Preheat oven to 375*.
Mix the olive oil and the herbs, salt, pepper, garlic and chilis and set aside.
Mix warm water and sugar together in a large bowl. When the sugar is dissolved, add the yeast. When the mixture begins to bubble and increase in volume, add the olive oil mixture and whisk well.
Slowly add the flour and cornmeal and knead into a ball. Do NOT over-knead. Place into a bowl sprayed with cooking spray, cover with a tea towel and place on top of oven until it doubles in size.
Once doubled in size, punch the ball down and allow to double in size once more (You can omit this stage if you use fast-acting yeast)
Divide into 12 rolls, 16-24 breadsticks or roll into one or two pizza bases and bake
Pizza base for 10 minutes (then top and continue baking)
Rolls for 15 minutes
Breadsticks for 10 minutes
For a simple loaf, spread into a 9" baking pan and bake 12-15 minutes
