Introduction

Better than that Hamburger Helper stuff. Better than that Hamburger Helper stuff.
Number of Servings: 6

Ingredients

    1 lb. lean ground beef
    1 large onion
    15 oz. tomato sauce
    1.25 c water
    2.5 c whole wheat pasta (I use the spirals)
    1 TB Italian Seasoning to mix with the beef
    1 tsp Italian Seasoning to mix with the cottage cheese
    1 cup fat free cottage cheese
    1 cup fat free mozzarella
    red pepper flakes to taste, if desired.

Directions

1. Cook the ground beef, onion & TB Italian Seasoning. over medium-high heat until the beef is crumbled & browned through. Drain if desired, then return to pan over high heat.
2. Add the water, tomato sauce, & pasta to the meat mixture. Bring to a boil.
3. Cover, turn heat to low & cook 20 minutes or until pasta is nearly desired doneness.
4. Mix the cottage cheese with tsp. Italian Seasoning. Spread the mix over the pasta & meat, then top with the mozzarella. Re-cover & let heat over medium-low for 5 minutes until the cheeses are melted.

    Incredible!
    I made this last night using turkey Italian sausage and it was really good! Had enough left to freeze for another meal and enough to have again tonite. Added a romaine salad to it. Thanks! - 12/2/08

    This was pretty good after I added more italian seasoning, garlic, and crushed red pepper. I will make this again but continue to tinker with the spices. - 11/7/08

    I suppose you could add more cheese, but I found the 2 cups called for to be plenty.
