Introduction

This creamy soup is quick and easy to prepare and it's good for you. You can substitute frozen brocolli cuts, but fresh brocolli is better. Ingredients

    1 bunch fresh brocolli, washed & separated in to flowerets, trim stalk and cube
    1 carrot, shredded
    1 small onion, chopped
    1 Tbls. EV olive oil
    1 can cream of chicken, celery or mushroom soup, reduced fat is fine
    4 oz. velveeta light, cubed
    2 soup cans skim milk
    1 C water
    salt & pepper to taste

Directions

saute onion in oil until translucent but not brown. Add brocolli and carrots. Add 1 C water and cover. Steam just a few minutes until brocolli is bright green, should still be a little crisp. Add soup and fill can 2 times with skim milk. Mix well and turn heat to low. Simmer about 10 minutes and add cheese and stir gently until melted. Add salt & pepper to taste.

    This was very tasty and pretty to look at with the color from the carrots and broccoli. Be careful not to let it boil or the milk will curdle. - 12/9/13

    I used 1% milk and instead of Velveta I used 2 oz cheddar and 2 oz of Monteray Jack. Family finished the complete batch and asked for more. I'll double the recipe next time for lunches. Thanks for sharing! - 4/7/11

    Incredible!
    Substituted 2% for skim milk, did not use carrots, and steamed the broccoli first before adding to sauted onions. Was delicious...Definitely a keeper - 2/2/11
