Introduction

I actually got this receipe years ago from Slim Fast online. Every time I've made it everyone has loved it! (FYI, the picture I found online, it was as close to what it catually looks like without the cheese and sour cream as I could find.) I actually got this receipe years ago from Slim Fast online. Ingredients

    1/4 onion, yellow
    1/2 bell pepper, green, medium
    4 ounces turkey breast, ground
2 teaspoons olive oil, extra virgin
    1/2 cup tomatoes, diced, canned
1/4 cup kidney beans (cooked from dry or canned without salt)
1/4 dry cup corn, yellow, frozen
    4 slices jalapeno
    1/2 teaspoon chili powder
    1/8 teaspoon cajun seasoning
    1 ounce cheddar cheese, low-fat
    2 tablespoons sour cream, fat-free

Directions

1. Wash and chop onion (peeled) and green pepper; set aside.
2. In a medium saucepan, cook ground turkey breast in 1 tsp. of the olive oil.
3. When nearly cooked through, add remaining 1 tsp. of oil and the chopped onion and green pepper; sauté until tender.
4. Add tomatoes, kidney beans (undrained), corn, jalapenos (chopped), chili powder, and Cajun spice; stir to combine.
5. Cover and reduce heat to low and simmer for 30 minutes, stirring occasionally and adding water if necessary to maintain stew consistency.
6. Garnish with shredded cheese and sour cream.

I also got this recipe from Slim Fast, and have been making it for years. My family loves it and asks for it often. - 1/7/10

  • Good
I like it and it's got a good flavor. In the future, I believe I'll not use the corn. It's a good filler, but I don't seem to care for corn much anymore. All-round good recipe. - 11/19/19

I'm not a fan of jalapeños so I left them out. This was really good! - 3/22/19
