I actually got this receipe years ago from Slim Fast online. Every time I've made it everyone has loved it! Ingredients

1/4 onion, yellow
1/2 bell pepper, green, medium
4 ounces turkey breast, ground
2 teaspoons olive oil, extra virgin
1/2 cup tomatoes, diced, canned
1/4 cup kidney beans (cooked from dry or canned without salt)
1/4 dry cup corn, yellow, frozen
4 slices jalapeno
1/2 teaspoon chili powder
1/8 teaspoon cajun seasoning
1 ounce cheddar cheese, low-fat
2 tablespoons sour cream, fat-free
Directions
1. Wash and chop onion (peeled) and green pepper; set aside.
2. In a medium saucepan, cook ground turkey breast in 1 tsp. of the olive oil.
3. When nearly cooked through, add remaining 1 tsp. of oil and the chopped onion and green pepper; sauté until tender.
4. Add tomatoes, kidney beans (undrained), corn, jalapenos (chopped), chili powder, and Cajun spice; stir to combine.
5. Cover and reduce heat to low and simmer for 30 minutes, stirring occasionally and adding water if necessary to maintain stew consistency.
6. Garnish with shredded cheese and sour cream.
