Introduction

I got bored of regular pancakes one day and decided to add a couple packages of instant oatmeal into the mix just to spice things up a little - and now I'm almost addicted! This makes fairly small pancakes, but they're really filling from the oatmeal, so it doesn't feel like you need more! You can use any flavor of instant oatmeal you prefer. Ingredients

    2 cups flour
    1/2 salt
    3 tsp. baking powder
    2 tbsp. extra virgin olive oil
    2 tbsp. sugar
    2 eggs
    1 1/2 cups milk

Directions

Add all the dry ingredients (flour, salt, baking powder, sugar, and the packages of instant oatmeal) in a bowl, and stir together. Make a little hollow in the middle, and add the wet ingredients. Mix together - you may have to add a little more milk to make it thin enough. Mix it until there aren't any visible lumps left. Pour onto a non-stick, hot griddle - you should have enough for 12 small to medium pancakes. Flip the pancake after the entire thing looks bubbly, and the edges are cooked, and continue cooking until done.
