Ingredients

    16 oz Dreamfields Penne Rigate Pasta
    1 tablespoon olive oil
    1 1/2 cups onion, chopped
    2 cloves garlic, minced
    1 pound ground turkey (or left over turkey)
    1/2 cup jarred sun-dried tomatoes in oil, drained & chopped
    1/4 teaspoon cayenne pepper
    1/2 cup walnuts, chopped
    5 cups Swiss chard, chopped
    1/2 cup chicken broth (with Herb OX no sodium broth)
    1/2 cup Parmesan cheese

Directions

1. Prepare Dreamfields pasta according to directions on package.
2. Meanwhile, in large skillet, heat olive oil over medium heat. Add onions and minced garlic. After a couple of minutes, add turkey and cook for 5 mins. Add sun-dried tomatoes, cayenne pepper, walnuts, Swiss chard, and chicken broth. Stir well to combine ingredients and cook for about 5 more minutes, until the Swiss chard is wilted and the sauce begins to thicken.
4. Combine the turkey and Swiss chard mixture with the cooked pasta and toss. Sprinkle with Parmesan cheese and serve.

    Very Good
    It's an easy healthy recipe. I didn't give it a 5/5 because the spices need work. I am used to a lot of strong flavors, so I added more crushed red pepper and onion powder at the end. Next time I will use drained fire roasted tomatoes to add more veggies. - 2/28/14
