Ingredients

    1 lb. DreamFields lo-carb Penne Rigate-cooked and drained
    2 c sliced zucchini
    2 c sliced yellow squash (summer)
    1 sm. can slice black olives
    1/3 c capers
    1 can Hunt's Diced Tomatos with Balsamic Vinegar, basil and olive oil
    4 garlic cloves minced
    1 lb. med raw gulf shrimp
    8 oz. bag of Kraft 2% Italian shredded cheese
    2 tbsp olive oil

Directions

saute all ingredients, EXCEPT pasta and shrimp, in olive oil....when veggies are still crisp add shrimp and cook till pink (will not take long). Drain excess water from pan and toss in a large bowl. Toss in pasta and bag of cheese. Toss till cheese begins to melt the serve in a bowl sprinkled with creole seasoning like Tony Chachere's! Makes a bunch!
