I was introduced to curry this year and I LOVE it!! I use the low fat cocnut milk, and it tastes lighter and has less fat. Ingredients

Coconut Milk, 2 cup
Chicken Breast, no skin, 4 breast, bone and skin removed
Peppers, sweet, red, fresh, 1 cup, chopped
Onions, raw, 1 cup, chopped
Carrots, fresh 1 cup, chopped
Curry powder, 4 tbsp
Salt, 1 tbsp
Pepper, black, 1 tbsp
Splenda, 1 tsp
Barley, pearled, cooked, 3 cup
Directions
cube chicken into 1 inch pieces, brown with onions, carrots and peppers, combine milk and all powdered ingredients, whisk together thoroughly and add to chicken and veggies, reduce for 10 minutes on medium.
While I am preparing the chicken I put the barley in the rice cooker, that way they finish around the same time. Once the sauce reduces it will thicken, then you just spoon over the barley.. Delish and easy!!
Garnish with green onion and lime
