Ingredients

2 tsp olive oil
1 small onion, finely diced
1 small sweet potato, peeled and diced
2 cloves garlic, minced
1 tbsp chili powder
2 tsp ground cumin
1/4 tsp ground chipotle chili
1/3 tsp salt, or to taste
1 1/3 c. water
1 15 oz. can black beans
1 cup canned diced tomatoes
2 tsp lime juice
2 tbsp chopped fresh cilantro
Directions
1. In large saucepan, cook onion and sweet potato until onion is slightly softened, about 4 minutes.
2. Add garlic and spices and stir for about 30 seconds.
3. Add water, simmer gently covered 10-12 minutes (until potato is slightly tender).
4. Add beans, tomatoes and lime juice; increase heat and return to full simmer; reduce heat slightly and simmer until slightly reduced, about 4 minutes.
5. Remove from heat and stir in cilantro.
Makes 4 c. in total. For me, that's 3-4 servings. For my very tall friend, it was only two. Nutritional information is figured at 4 servings.
