Introduction
This parfait is a "fool" because high sugar or high fructose corn syrup whipped cream is usually used, but here we replace it with sucralose sweetened yogurt! This is an excellent desert or treat if you are craving something sweet but don't want all the calories with it! You can substitute any berry of choice for the raspberries if you prefer. Ingredients

2 pounds fresh raspberries
1 1/2 cups plain, low-fat yogurt (Greek-style yogurt may also be used. I actually prefer it in this recipe because it is thicker)
1/2 cup sucralose, divided (Like Splenda)
6 tbsp Kellogg's Low-Fat Granola without Raisins cereal (or other low-fat plain granola cereal)
Directions
1. Rinse berries and drain in colander, leaving them a little damp. Place in a mixing bowl, sprinkle with 1/4 cup of the sucralose, mix well, and allow to macerate for about 5 minutes or so. Place about 3/4 of the macerated berries in a food processor or blender and puree. Pour into a separate bowl than remaining macerated berries. Place all berries in refrigerator and chill until cold, about 1 hour.
2. Mix remaining 1/4 cup sucralose with the yogurt. Chill with berries.
3. When ready to serve, combine yogurt with half the berry puree and spoon this yogurt-berry mixture evenly into 6 glass parfait glasses. Reserve a few teaspoons of yogurt-berry mixture for topping.
4. Cover yogurt-berry mixture with the plain puree.
5. Top plain puree with reserved berries, saving 6 berries.
6. Top each parfait with (in this order) 1 tbsp low-fat plain granola, a dollop of yogurt-berry puree, and then place one of the remaining reserved berries in center of each dollop. Serve and enjoy!
