Ingredients

3 Tbsp low sodium soy sauce
2 Tbsp rice vinegar
1 Tbsp sesame oil
3 Tbsp smooth peanut butter
2 Tsp fresh grated ginger root
1 Tsp fresh lime juice
1/4 tsp hot sauce (ie tabasco)
1 Pound boneless skinless chicken breasts thinly sliced
3 cups brocolli florets
1 sm sweet red papper thinly sliced
1 Tbsp sesame seeds
Directions
1. In small bowl, whick together soy sauce, rice vinegar, sesame oil, ginger, peanut butter, lime juice, and hot sauce.
2. Fill a large skillet halfway with water and bring to boil. Add Chicken and cook 4 minutes or until cooked clear through.. Set aside. When cool enough to handle use 2 forks to shred chicken and place in large serving bowl.
3. Bring large pot of lightly salted water to a boil , cook noodles according to package directions and add brocolli for the final 4 minutes of cooking time. Drain noodles and rinse with cold water.
4. Place noodle micture and red papper in serving bowl with chicken. Drizzle with sauce and toss well to coat. Sprinkle sesame seeds on top. Serve cold or at room temperature.
Serves 4 as a main dish, 6 if side dishes are included
