Ingredients

    2 1/4 cups Hood reduced-carb skim milk
    1 1/2 cups egg whites
    2 cups chopped broccoli (frozen or fresh)
    2 cups shredded cheddar cheese (you can use low fat, but the texture isn't very good)
    3 tablespoons (level) whole wheat flour
    1 tablespoon dried tarragon
    1 tablespoon dired rosemary
    1/2 cup roasted red peppers
    dash black pepper

    (This recipe does not need any salt, because cheddar cheese is fairly salty already.)

Directions

1. Preheat oven to 350 F.
2. In a mixing bowl, combine egg whites, milk, and flour, and whisk until blended.
3. Add herbs, and mix well.
4. Fold in vegetables shredded cheese.
5. Pour mixture into a nonstick 9 by 13 pan, or spray a regular pan with cooking oil.
6. Bake for about 40 minutes or until set.
7. Cut into 8 pieces and enjoy, or place in individual freezer bags and microwave when needed. Quiche is good for one month in the freezer.
