Introduction

This is a wonderful low fat tasty mexican dish that feels like comfort food, and is also nice if you feel like changing things up for dinner! (modified from the Azumaya recipe.) Ingredients

    10 Large Square Wrappers (I used
    Azumaya Egg Roll Wrappers for nutritional
    info)
    1 16 oz can of low fat refried beans
    1 package taco seasoning (or more to your
    liking)
    1.25 pound ground beef (nutritional info is for
    1.28 pounds..closest i could get to 1.25)
    1 cup shredded reduced fat cheddar cheese
    (made with 2% milk)
    1 cup fat free shredded cheddar cheese
    1/2 cup chopped onions
    12 tablespoons of Taco Sauce


    optional green onion & sour cream to top on individual servings...not included in nutritional info

Directions

Preheat oven to 350.
Brown ground beef, drain, and add taco seasoning packet. Spray a large square baking dish with non-stick cooking spray (I use 13X9) Line it with uncooked wrappers (about 5.) Spread refried beans over the wrappers on the bottom of the pan, sprinkle chopped onions, and spread taco sauce over evenly. Add ground beef, sprinkle all the cheese, and add remaining taco sauce (amount can be modified to your liking of course.) Cover with wrappers. (It's better if you don't double layer if possible)
Bake 10 mins at 350. Should let it cool about 5 minutes. Serves 12.


Optional: Add sour cream and chopped green onions. I like to serve Burrito Pie with a shredded lettuce & tomato salad. I like salsa as the dressing on the salad. Enjoy!!
