Introduction

This is a very easy to make. It is fast because I used already cooked rice. I actually used 3 green onions instead of scallions but could not find them on the food list. This is very high sodium but you could tone it down by not using a seasoning mix because the sweet and sour sauce gives it a good flavor This is a very easy to make. Ingredients

    4 packages(4 cups) Uncle Ben's Ready Rice, Long Grain and Wild
    3 green onions or 1 small scallion
    2 Tablespoons Olive Oil
    Sunbird Fried Rice Seasoing Mix(1 package=9 teaspoons)
    2 Tablespoons Contadina Sweet and Sour Sauce w/ Pineapple
    2 T. Water
    2 Large Eggs
    1 Cup of Frozen Peas
    1/4 Cup water for the peas

Directions

Makes 4 servings, about 1 Cup each
Bring 1/4 cup water to a boil in a small saucepan. Add the peas and bring back to a boil. Reduce heat, cover, and let cook for 4 minutes. Turn off heat and reserve the peas.
Meanwhile chop the green onions.
Add the olive oil to a wok or saute pan and turn on medium high.
Squeeze the rice while still in the bag to break it up.
Add the green onion and rice to the pan and cook while stirring for about 3 minutes, until the onions start to soften and the rice is warm.
Add in the seasoning and the sweet and sour sauce. Add the 2 Tablespoons of water as well.
Mix until the seasoning and sauce are all mixed in and allow to cook about 2 more minutes.
Push the rice aside and turn heat down to medium.
Add the eggs and scramble them.
Once the eggs are scrambled mix them back into the rice.
Turn the rice back to medium high and add the peas that you cooked.
Cook about 2 minutes longer while stirring often.
Serve and enjoy.
I like to eat this store bought pork and seeds and frozen stir fry vegetables as a complete meal.
