Introduction

This is a modified version of my favorite quiche recipe, and is just as tasty lowfat and vegetarian! This is a modified version of my favorite quiche recipe, and is just as tasty lowfat and vegetarian!

Ingredients

    One deep dish 9 inch pie shell, prebaked about 8 minutes or until light brown.

    1/2 c. fat free mayo.
    2/3 cup nonfat milk
    3 eggs
    1 T cornstarch
    1 1/2 cups lowfat cheese of choice, shredded
    1/2 cup chopped Morningstar sausage
    1/3 cup onion, chopped
    1/2 cup mushrooms, chopped
    1 cup raw spinach, chopped, or 1/2 10 oz pkg. frozen spinach, thawed and drained.

    The secret to this perfect Quiche is to microwave the onions and mushrooms for 2 minutes, then sqeeze out all the liquid from them. Do this also with frozen veggies if you use them. Placing them in a cheesecloth, then squeezing out the liquid works great and is so easy.

    I like to mix all ingredients and then pour into pie shell. For an elegant layered appearance, you can mix mayo, milk, eggs and cornstarch. Layer remaining items in pie shell. Pour egg mixture over all. Bake at 325 degrees for 45 minutes or until firm and lightly browned on top.

Directions

Bake in preheated 325 degree oven for 45 minutes.
